Swedish sausage stew (Svensk pølseret)
Swedish sausage stew (Svensk pølseret) is one of those dishes that just always hits the spot. It is simple, warm, and full of flavor—perfect for when you want dinner on the table without much hassle. The combination of potatoes, sausages, and a deliciously creamy sauce creates a dish that feels cozy and tastes like childhood. It is comfort food at its best: easy, quick, and something the whole family loves.
It is often served on a Sundag , I call it cleaning the fridge, check if there is som leftovers like potatoes and other vegtables like paprika and carots
Ingredients of Swedish saysage stew:
- 650 g pre Boiled potatoes
- 6-10 sausages
- 10 g Butter
- 2 Fine-chopped onions
- 1 Fine-chopped garlic clove
- 100 g Tomato paste (concentrated)
- 200 mlm water or some milk
- 2 tsp Mild paprika
- 2 tbsp Ketchup
- 1 tsp Apple cider vinegar
- 1 dl Cooking cream
- Some coarse salt freshly ground pepper as you like it

Instructions
Boil your potatoes to nearly finished status.
Sauté the onions and garlic in oil in a large pot over medium heat until the onions are soft, but not browned.
Add the sausages and paprika (other vegrables), stirring for 5 minutes. Turn down the heat slightly, add the tomato paste and water, ketchup, and stir well. Let it simmer for 10 minuttes.
Add the cream, and season with apple cider vinegar, salt, and pepper to taste. and let it simmer for 10 minutes
At the end, add the potatoes, letting it simmer for 5-10 minutes and stir.
Heat thoroughly while stirring, till it cate nice thick sause and the dish is ready to serve topped with a generous sprinkle of chives.
Tips & Trix
- you can keep a splash of oil, a pinch of chili, and a dash of milk handy!
- you can serve it with rice or mashed potatoes or pasta
- add different sausages also more tasty ones like beef sausages (cocktail sausages and/or chicken sausages)
- you can also add some carrots, paprika or champion, like I did in the above pictures
Little about the dish name "Swedish saysage stew"
Despite its name, ***Svensk pølseret*** (Swedish sausage stew) is an entirely **Danish dish**. If you ask someone in Sweden for "Svensk pølseret," they will likely have no idea what you are talking about!
The most popular origin story attributes the dish to "Danish scouts" or school classes on summer camp trips in Sweden:
The Campfire Origin: "Toward the end of a trip in the Swedish woods, counselors or scouts gathered leftover pantry staples—boiled potatoes, any sausages, ketchup, paprika, and cream—and threw them into a single pot over a campfire."
The Name: Because it was created during a trip to Sweden using a "whatever we have left" mix of sausages and potatoes, it simply became known as "Svensk pølseret" ("Swedish sausage dish").
The concept spread back home in Denmark as a cheap, kid-friendly "one-pot" comfort food to use up leftover boiled potatoes.
Note: Sweden does have a similar, well-known comfort dish called "Korvstroganoff" - made with Falukorv sausage, onion, tomato paste, and cream—which may have also loosely inspired the flavor profile. However, Korvstroganoff is traditionally served over rice or pasta rather than cooked directly with potato cubes in the pot.
